摘要
结合鲜切水果的加工工艺流程,从物理、化学和生物三方面综述了国内外应用于鲜切水果产业的各种保鲜技术。针对鲜切水果加工与保鲜的研究现状,对其发展趋势和商业前景进行了展望。
Combining with fresh-cut fruit processing process, the author reviewed variety of new preservation tech- niques from three aspects such as physics, chemistry and biology applied to fresh-cut fruit industry at home and abroad. Research status for fresh-cut fruit processing and preservation, development trends and business prospects were discussed.
