酒石酸催化大豆异黄酮糖苷水解苷元的工艺研究 被引量:2

摘要 研究酒石酸催化大豆异黄酮糖苷水解苷元的最佳工艺条件.以大豆异黄酮糖苷水解率为评价指标,采用单因素和正交试验法对水解的工艺条件进行优化.确定酒石酸催化大豆异黄酮糖苷最佳水解工艺条件为:反应温度130℃,反应时间为3.0 h,酒石酸水溶液浓度为2.0 mol/L,水解率达到94.0%以上.优选得到的糖苷水解生成苷元工艺简单易行,稳定性好. We studied the optimum hydrolysis conditions of soybean isoflavone glycosides into isoflavone aglucons using tartaric acid as catalyst. The hydrolysis process was optimized through single factor and orthogonal experiments based on the hydrolysis rate of isoflavone glycosides. The results showed that the optimum hydrolysis conditions were as follows: temperature 130 ~C ,reaction time 3 hours, and tartaric acid 2.0 mol/L; under the optimum conditions,the hydrolysis rate reached above 94%. The optimized hydrolysis process was simple, operable and stable.
