摘要
研究不同温度条件下(15℃、20℃、25℃、30℃)高水分粳稻谷表面明度L值、色度a、b值随储藏时间延长的变化规律,并结合动力学分析方法,旨在得到粳稻谷L、a、b值在储藏期间变化的动力学预测模型。结果表明,明度L值随储藏时间的延长而下降,且温度越高下降越明显,在温度15℃、20℃、25℃、30℃条件下储藏90 d后,粳稻谷L值由60.16依次下降至58.21、58.16、57.03、56.84;色度a、b值随储藏时间的延长而上升,且温度越高上升越明显,在温度15℃、20℃、25℃、30℃条件下储藏90 d后, a值由6.27依次上升至6.60、7.00、7.21、7.24;b 值由29.60依次上升至29.96、29.99、30.19、30.23。初步建立了L、a、b值与储藏温度、储藏时间的动力学预测模型。L的预测模型:ln A t= e-341460/RT+6.163× t+4.0970;a的预测模型:ln A t= e-43800/RT+10.941× t+1.8358;b的预测模型:ln A t= e-53220/RT+13.008× t+3.3880。动力学模型预测值与实际测量值的相对误差在0.03%~6%之间,说明该模型可以对储藏期间粳稻谷表面颜色变化进行一定的预测。
Monitor the changes of L ,a ,b during high moiscure japonica rice storage under different temperatures (15℃ ,20℃ ,25℃ ,30℃) ,binding kinetics analysis method to study the influence of storage conditions on the changes of L ,a ,b and establish the dynamics model of color changes .The results show that L gradually decrease with the storage time ,moreover ,the higher the temperature is ,the faster the decreasing is ,after storage 90d under the temperature of 15℃ ,20℃ ,25℃ ,30℃ ,the L is from 60 .16 in turn to 58 .21 ,58 .16 , 57 .03 ,56 .84 ;a and b are on the increase with the storage time , the higher the temperature is ,the more obvious the trend of the increasing is , after storage 90d under the temperature of 15℃ ,20℃ ,25℃ ,30℃ ,a rose from 6 .27 to 6 .60 ,7 .00 ,7 .21 ,7 .24 ;b rose from 29 .60 to 29 .96 ,29 .99 , 30 .19 ,30 .23 .The predictive model of L :ln At=e-341460/RT +6 .163 × t+4 .0970 ;The predictive model of a:ln At=e-43800/RT +10 .941 ×t+1 .8358;The predictive model of b :ln At=e-53220/RT +13 .008 × t+3 .3880 .The relative error of dynamics model of prediction value and actual measurement value is between 0 .03% and 6% ,it shows that this mod‐el can better predict the color changes during storage .
