一朵云不同部位氨基酸的分析与评价 被引量:2

摘要 采用盐酸水解法,利用高效液相色谱仪对一朵云所含氨基酸进行定性、定量分析。结果显示,一朵云根含有至少14种氨基酸,氨基酸总量为5.12%,其中,有4种是人体必需氨基酸,含量为1.95%,占氨基酸总含量的38.08%;一朵云茎叶含有至少17种氨基酸,氨基酸总量为2.17%,其中,有7种是人体必需氨基酸,含量为0.85%,占氨基酸总含量的39.17%,一朵云的根及茎叶必需氨基酸的构成比例均基本符合食品法典委员(FAO/WHO)的理想模式标准。根及茎叶均含有8种味觉氨基酸(其中2种鲜味氨基酸,4种甜味氨基酸,2种芳香氨基酸),总含量分别为2.9%、1.8%,3种特殊氨基酸总含量分别为1.44%、0.62%。最后用模糊隶属函数法进行综合评价发现,一朵云的根氨基酸质量较好;茎叶氨基酸质量相对较差。这些结果将为一朵云的开发利用奠定重要基础。 Using the hydrochloric acid hydrolysis method,contents of amino acids and their constituents were determined on HPLC. The results indicated that from the bottom of Botrychium ternatum,14 amino acids were identified,and the mean total amino acid content was 5.12 %,among them,there were 4 kinds of essential amino acids for human nutrients,and the content was 1. 95 %,the ratio of the essential amino acids to the total amino acid was 38. 89 %. But from the stem leaf of Botrychium ternatum,17 amino acids were identified,and the mean total amino acid content was 2. 17 %,among them,there were 7 kinds of essential amino acids for human nutrients,and the content was 0. 85 %,the ratio of the essential amino acids to the total amino acid was 39. 17 %. The essential amino acids composition of the root and stem-leaf of Botrychium ternatum basically met the requirements of the food standard issued by FAO / WHO. The total content of 7 taste amino acids including 2 delicious amino acids,4 sweet amino acids and 2 aromatic amino acid in the root and stem-leaf was 2. 9 % and 1.8 % respectively,and the total content of three special amino acids was 1. 44 % and 0. 62 % respectively. Finally,the synthetical evaluation by fuzzy subordinate function discovered that the amino acid quality of bottom of Botrychium ternatum was better,but the amino acid quality of the stem-leaf of Botrychium ternatum was relatively poor. All these data would provide important evidence for further exploitation of Botrychium ternatum.
