暗褐网柄牛肝菌人工、半人工与野生子实体营养成分对比 被引量:21

Nutritive Components Comparison of Cultivated,Semi-cultivated and Wild Phlebopus portentosus Fruit Bodies

摘要 对暗褐网柄牛肝菌人工、半人工与野生子实体营养成分进行了比较分析。结果表明,暗褐网柄牛肝菌人工、半人工和野生子实体均含有丰富的蛋白质、粗脂肪、总糖、粗纤维、多种矿质元素和氨基酸。野生子实体含有较高的蛋白质、总糖和粗纤维,半人工子实体含有较高的灰分和粗脂肪。人工子实体的P和Zn含量较高;半人工子实体的S、Mg和Fe含量较高;野生子实体的K、Ca、Cu和Mn含量较高。半人工子实体的必需氨基酸与氨基酸总量比值最高,为38.86%;必需氨基酸与非必需氨基酸的比值也最高,为0.64。 The nutrient components of cultivated, semi-cultivated and wild P. portentosgs fruit bodies were compared and analyzed. The result showed that cultivated, semi-cultivated and wild fruit bodies contained rich protein, crude fat, total sugar, crude fiber, a variety of rain- end elements and amino acids. Wild fruit bodies contained a higher protein, total sugar and crude fiber, and semi-cultivated fiuit bodies had higher ash and crude fat. Cultivated fruit bodies had higher phosphorus and zinc, seml-cultivated fruit bodies had higher sulfur, magnesium and iron, wild fruit bodies contained higher potassium, calcium, copper and manganese. The essential amino acids of semi-cultivated fruit bodies were the highest, which accounted for 38.86 % of total amino. The ratio of essential amino acids and non-essential amino acids was also the highest, 0.64.
