摘要
近年来,非热杀菌技术已成为当今食品包装发展的主流,其灭菌原理及其技术与食品安全密不可分。综述脉冲杀菌技术、微波杀菌技术等非热杀菌技术的杀菌原理、特点及应用前景,为相应领域研究提供一定的参考与借鉴。
In recent years, non-thermal sterilization technology is becoming mainstream direction in food packing area; its sterilization principle and technique have inseparable relations with food security. This article summarizes pulse sterilization technology, microwave sterilization, some non-thermal sterilization technology's principle、features and application prospect, provides a reference for the re-search in relative area.
