摘要
采用正交试验方法,研究葡萄新品种华葡1号的酿酒工艺。确定华葡1号葡萄的最佳酿酒工艺参数为:酵母添加量1%,发酵温度25-27℃,发酵时间8 d,在此工艺条件下生产的葡萄酒酒体呈宝石红色、澄清透明,果香浓郁,余香绵长,醇和爽口。说明华葡1号是一种理想的葡萄酒原料。
Through orthogonal test,the process of fermented wine by a new grape cultivar Huapu 1 was studied.The optimum process parameters for Huapu 1 were as follows:the amount of yeast was 1%,the fermentation temperature was 25-27 ℃ and the fermentation time was 8 d.Under these conditions,the wine was clear and transparent with ruby red,the fragrance was full and good with evident grape aroma,and the taste was mellow and supple,indicating that Huapu 1 was an ideal wine raw materials.
