摘要 随着健康饮食文化的发展,人们非常关注所摄入的食品对自身健康的影响,因此对于甜味剂的研究,积极寻找低热量功能性甜味剂势在必行。D-阿洛酮糖是一种天然的低热量功能甜味剂,它天然存在于自然界中,但含量极少,且能量低,并具有降血糖、降血脂和神经保护等生理功效。在食品、保健和医疗领域具有重要的应用价值,因此是近年来功能甜味剂的研究热点之一。目前关于D-阿洛酮糖的生产应用的报道较少,本文主要综述了D-阿洛酮糖的功能和应用、国内外D-阿洛酮糖工业化生产和应用的发展动向,D-阿洛酮糖的安全性,以及国内外相关允许添加的法规情况。 With the development of the culture of healthy food, we are paying more attention to the influence of the in- take food on our health. Therefore, it is necessary to make further research on new low - calorie functional sweetener to meet demand. D - psicose, a natural low - calorie sweetener, has many physiological functions including lowering blood pressure, reducing blood lipid and neuroprotective effects and etc, so it has important application values in food, pharmaceutical and health care area. D - psicose is one of the hotspots in current study. However, there have been few reports about the synthesis and application of psicose. This paper mainly introduced the trends of industrial produce and application of psicose in world, in addition of the laws and regulations on permit to use.
