摘要
丙烯酰胺(Acrylamide,AA)是1种重要的食品中内源性污染物,对实验动物具有神经毒性、生殖毒性和遗传毒性,对人类具有潜在的致癌性。本文利用葡萄糖(Glc)/果糖(Fru)和天冬酰胺(Asn)建立美拉德低湿体系模型,研究8种抗氧化剂——染料木素、葛根素、硫辛酸、柚皮苷、白藜芦醇、木犀草素、辅酶Q10及谷甾醇对模拟体系中AA生成的抑制或减少作用,并优化各抗氧化剂对AA的最佳抑制浓度。在试验浓度下8种抗氧化剂对两种体系中AA生成量均有显著的抑制作用(P<0.05)。其中,谷甾醇对AA的抑制作用最强,最佳抑制浓度为10-1mmol/m L。在Glc/Asn体系中,AA生成量为20.74μmol/mol Asn;在Fru/Asn体系中AA生成量为32.10μmol/mol Asn,与对照组相比抑制率分别达到了94.27%,94.11%。
The main purpose of the present paper was to evaluate the inhibition effect of genistein, puerarin, lipoic acid, naringin, resveratrol, luteolin, coenzyme Q10 and sitosterol on acrylamide(AA) formation in glucose/fructose-asparagine(Glc/Fru-Asn) Maillard low humidity model system, and optimization the best inhibitory concentrations on AA formation of each antioxidants. The selected antioxidants has significant inhibition effect on AA formation in Glc/Fru-Asn low humidity simulation systems(P〈0.05). Sitosterol has the strongest inhibition effect on AA formation, and the best inhibitory concentration is 10^-1mmol/m L. In Glc-Asn system, the amount of AA was 20.74 μmol/mol Asn, and in Fru-Asn system the amount of AA was 32.10 μmol/mol Asn, the inhibition rate reached at 94.27% and 94.11%, respectively, compared with the control group.
