茶氨酸属于茶树特征性非蛋白质主体氨基酸,具有多种生理功能,对人们的身体健康大有裨益,在食品、医药、保健、精细化工等领域具有非常重要的开发与应用价值。本文就茶氨酸的理化性质、制备合成、生理功能和应用等方面进行了综述。
Theanine is a tea featured non-protein base amino acid with multi physiological function, which is most helpful to human health and plays important role in food, medicine, health care and fine chemistry. This article summarized the physical and chemical nature, biosynthesis physiological function and application of theanine.
