摘要
中国小麦是仅次于水稻的第二大口粮作物,近年来供需基本接近紧平衡。目前小麦的主要消费形式是以小麦粉为原料制作传统主食,近年来小麦替代玉米用作饲料的情况趋于常态。随着小麦加工技术的不断进步以及人们对小麦各组成部分生理功能认识的逐渐提高,小麦消费结构将日趋合理,产品附加值也将得到提高。
Wheat is the second largest provision crop after rice in China, and recently its supply and demand status tends to tight balance. China’s wheat is mainly used to make traditional staple food, and also normally used as feed instead of maize in recent years. Along with the advancement of wheat processing technology and increasing understanding on the physiological function of each component of wheat, the consumption structure of China’s wheat is going to be reasonable and the added value will be improved.
