摘要 随着对自由基与健康、疾病关系认识的发展,人们对具有抗氧化功能保健食品的需求不断增长。本文综述了常见的具有抗氧化作用的粮食及制品、水果蔬菜、酒类、调味品、豆制品及水产品,并对抗氧化食品的应用前景作出展望。
