摘要
中国饮食文化丰富多彩,博大精深,形成了八大菜系,是中国文化的重要组成部分。而江西的赣菜,虽不在八大菜系之列,但由于其独特的地理自然环境和历史条件,兼收并蓄,独具特色。然而,正如整个中国菜名翻译一样,江西赣菜的翻译较为混乱,除了错译、乱译、误译外,既缺乏统一标准,又无特色,而且大量的菜名还没有对应的译文。从跨文化角度,依据现有的中国菜名的通行的翻译结构和方法,参照西方菜名的表达形式,探讨赣菜翻译的策略和方法。力图将独具特色的赣菜所蕴含的历史文化和绿色健康的理念呈现出来,从而规范赣菜的翻译,提升江西国际旅游业形象。
Rich, extensive and profound Chinese food culture, forming the eight great cuisines, is an essential component of Chinese culture. Jiangxi Cuisine, though not one of China's famous eight regional cuisines, it is appealing with its unique styles and flavors because of the geographical and environmental conditions. However, just like the translation of the Chinese cuisine as a whole, the translation of Jiangxi cuisine, due to lack of uniform standards, is in chaos and featureless with ungrounded translation and mistranslation. Based on the existing translation structure and methods of Chinese dishes and the expression form of Western dishes, this paper attempts to discuss the translation methods and strategies of Jiangxi cuisine in terms of cross-culture so as to present the unique historical culture and the concept of green health of Jiangxi cuisine, regulate the translation of Jiangxi cuisine and improve the image of the international tourism industry of Jiangxi province.
