摘要
实验以裸五角瓜参为研究对象,研究了复合防腐剂的复配及对裸五角瓜参的保鲜功效。响应面法研究结果表明,最佳复合防腐剂的配比为Nisin 0.05%、乌梅0.3%、地肤子0.04%和马尾藻0.4%;以该配比制得的复合防腐剂可有效抑制光参的菌落总数,经复合防腐剂处理的光参10d之内菌落总数符合标准,且对光参主要腐败微生物的假单胞菌具有良好的抑制效果;此外,经复合防腐剂处理的光参的p H值和TVBN显著优于对照组,其中TVBN在10d后仅为5.12mg/100g。
Acolochirus inornatus was taken as experiment object. The preservation effect of compound preservatives on acolochirus inornatus and the ratio of them were studied. The results of response surface method showed that the optimal ratio of compound preservative were nisin 0.05 %, fructus mume 0.3%, fructus kochiae 0.04% and gulfweed 0.4%. Under this condition, the compound preservative could effectively inhibit the growth of total number of colony. And the total number of colony within 10d was according with the standard. It was also effective in controlling Pseudomonas. Furthermore, the pH and TVBN of acolochirus inornatus treated by compound preservative were significantly better than the control groups. Especially the value of TVBN of the sample was only 5.12mg/100g after 10d.
