摘要
近年来,内蒙古锡盟地区牛羊肉产业化发展速度较快,由于草原上的牛羊肉独树一帜,倍受国内外消费者的青睐,但注水牛羊肉也随之出现。通过对锡盟地区牛羊原料肉水分进行摸索和探讨,制定出一个相对可靠的水分含量地方标准值,从而判定牛羊肉是否合格。
In recent years, beef and mutton industrialization were developed fast in Ximeng region of Inner Mongolia. Beef and mutton of grassland is unique and favored by customers at home and abroad. But beef and mutton with water injection were come out. Its water content in Ximeng region was explored and discussed in this article. A relatively reliable local standard of water content was established to determine whether beef and mutton qualified.
