摘要
就施胶酶的性能以及其对玉米淀粉改性的熬制工艺进行了研究.结果表明:施胶酶的最适温度为60℃,最适pH为6.0;在pH=4.5~7.0范围内,施胶酶都有良好的酶活特性;玉米淀粉熬制的最佳工艺是,熬制时间为20 min,熬制的底物质量分数为20%,酶用量为每吨淀粉200 mL;通过增加酶的用量可以减少玉米淀粉的熬制时间.
In this paper,research the performance of the sizing Enzyme and discuss technical study of the modify the coin starch. The results show that:the best temperature 60 ℃, the best pH:6.0. The pH in the range of 4.5-7.0, the enzyme keep a good activity. The most compatible hydrolyzing condition is that the reacting time, coin starch consistency, alpha-amylase dosage are 20 min, 20%, 200 mL,respectively. Increasing the alpha-amylase dosage can reduce the reacting time.
