1,3-甘油二酯食品安全性毒理学评价 被引量:3

摘要 1,3-甘油二酯(1,3-DAG)是天然油脂的微量成分,由一分子甘油和两分子脂肪酸组成,脂肪酸分别结合在甘油1位和3位的羟基端。国外研究表明,与日常食用油脂中的三酰甘油相比,1,3-DAG可抑制餐后血清三酰甘油水平的升高,减少脂肪在体内的积累[1-3]。国内对1,3-DAG的研究和应用起步较晚,目前尚未见系统的毒理学评价资料。
