金枪鱼碎肉水解液喷雾干燥工艺优化及抗氧化活性研究 被引量:5

摘要 [目的]研究金枪鱼碎肉水解液喷雾干燥条件及喷雾干燥产物的抗氧化活性。[方法]以干燥的蛋白肽粉产量为指标,对入口温度、干燥时间及进样速度进行研究,并采用正交试验优化了喷雾干燥工艺。[结果]优化的喷雾干燥条件为入口温度145℃,干燥时间65min,进样速度3 ml/min时,蛋白肽粉产量为14.55 g/L,所得产物颜色较浅,粒度均匀,水溶性较好,气味芬芳。干燥肽粉对DPPH自由基半数清除率为25.48 mg/ml,羟自由基的半数清除率为28.81 mg/ml,还原力随肽粉溶液浓度增加而增加。[结论]在一定条件下喷雾干燥得到的金枪鱼碎肉水解液对清除DPPH自由基、羟自由基具有良好的效果,有较强的抗氧化能力,操作方法简易,生产周期短,成本较低,具有较高的工业利用价值。 [Objective] To study tuna meat hydrolyzate spray drying conditions and the influence of spray drying to hydrolysate antioxidant activity. [Method] With dried protein peptide power as index,the inlet temperature,drying time and filling speed was studied,and the spray drying process was optimized by using orthogonal experiment. [Result] The optimized conditions of spray-drying is the inlet temperature 145℃,the drying time 65 min,the sampling rate 3 ml / min,the protein power yield 14. 55 g / L,products is shallow,epigranular,solvable and aromatic. Dry peptide powder on DPPH free radical clearance ID50 is 25. 48 mg / ml,hydroxyl free radical half of the clearance is 28. 81 mg / ml,reducing power increases with the increase of peptide powder solution concentration. [Conclusion] Tuna meat hydrolyzate under certain conditions of spray drying has good effect to remove DPPH free radical,hydroxyl free radica and has great antioxidant ability. The techonlogy is simple and has short production cycle,lower cost and higher industrial utilization value.
