摘要
食用昆虫为人类提供了丰富的蛋白质、氨基酸和不饱和脂肪酸,实现与其他食物蛋白质、氨基酸及脂肪酸的互补。对食用昆虫蛋白质与氨基酸、脂肪与脂肪酸的组成及提取分离进行了综述,并对食用昆虫的营养价值进行了分析与评价。
Edible insects provide rich protein,amino acids and unsaturated fatty acids for human being,and their protein,amino acid and fatty acid are complementary to other foods. The composition and extraction of protein and amino acids, fat and fatty acid of edible insect were reviewed, and the nutritional values were analyzed and evaluated.
