摘要
研究了40℃条件下人工加速陈化对小麦籽粒淀粉和蛋白质消化率的影响。结果表明,人工陈化12周的小麦籽粒中快消化淀粉(RDS)和抗性淀粉(RS)质量分数分别下降了30.15%和26.75%,慢消化淀粉(SDS)质量分数增加了26.59%,淀粉和蛋白质的消化率下降程度不同:淀粉水解20、50、80和120 min后消化率分别下降了30.15%、13.75%、7.06%和1.79%;胃蛋白酶处理的蛋白质消化率下降了8.27%,胃-胰蛋白酶处理的蛋白质消化率下降了4.91%,可溶性蛋白的提取率下降了34.29%。高温储藏对小麦淀粉和蛋白质的消化率影响显著(P<0.05)。
Effect of accelerated aging of 40 ℃ on nutritional quality of starch and protein in wheat grains has been studied in the present paper. The results indicated that rapidly digestible starch (RDS) and resistant starch (RS) declined by 30. 15% and 26.75% respectively, while the slowly digestible starch (SDS) increased by 26.59% during accelerated aging. Apparent decline to various extents in starch and protein digestibility could be also observed in accelerated aging. Starch digestibility was declined by 30.15% , 13.75% , 7.06% and 1.79% respec- tively after incubated with separated enzyme solution 20, 50, 80 and 120 min, while protein digestibility was declined by 8.27% and 4.91% after pepsin and pepsintrypsin digestion; the extractability of soluble proteins decreased by 34.29% during accelerated aging. Effect of accelerated aging on digestibility of wheat starch and protein was remarkable (P 〈 0.05 ).
