摘要
以黑米为材料,采用HPLC-DAD法和UPLC-MS/MS法,鉴定其中的花青素主要为矢车菊素-3-葡萄糖苷,并采用HPLC-DAD法对其进行定量分析。结果表明,黑米中的矢车菊素-3-葡萄糖苷含量达(1.017±0.028)mg/g,远高于另外5种有色稻米中的矢车菊素-3-葡萄糖苷含量。该方法准确、灵敏、高效、稳定,可用于高花青素含量的黑米品种筛选。
The main kind of anthocyanin, cyanidin-3-glucoside, in black rice was identified with HPLC-DAD (high-performance liquid chromatography with diode-array detection) and UPLC-MS/MS (ultra-high-performance liquid chromatography with tandem mass detection) method. HPLC-DAD was used to quantitatively analyze the content of eyanidin-3-glueoside. The results showed the content of cyanidin-3-glucoside was 1.017 mg/g, much higher than that of other 5 colored rices from different places. The method is accurate, sensitive, efficient and stable, and can be used to screen black rice varieties with high-content anthocyanin .
