摘要
通过正交试验对玉米生料酿酒的工艺进行了优化研究。结果表明,玉米生料酿酒的最佳条件以生料酒曲添加量0.7%,加水量300 kg/100 kg玉米粉,介质p H 4.0,玉米粒度140目为宜,搅拌式发酵反应器为较好的发酵设备。
Technology of brewing wine with raw mainze was optimized with orthogonal design.The results showed that optimal conditions were distilled yeast dosage of 0.7%,the amount of water of 300 kg/100 kg raw materials,the best medium pH of 4.0 and maize particle size of 140.The most suitable equipment for wine making with raw maize was agitated fermentation equipment.
