桑葚果渣可溶性膳食纤维提取工艺优化 被引量:10

摘要 以加工废弃物桑葚(Fructus Mori)果渣为原料,比较5种不同提取方法对桑葚可溶性膳食纤维提取的影响,通过单因素及正交试验优化桑葚果渣中可溶性膳食纤维的工艺条件,并分析其各理化指标。结果表明,最佳提取工艺为碱浸浓度0.25 mol/L、碱浸时间1.5 h、碱浸温度70℃、料液比1∶25(m/V,g∶m L)、水提时间2 h,在此条件下可溶性膳食纤维提取率达到最大值,为31.62%,其吸水膨胀性为4.49 m L/g、持水性为5.53 g/g、持油性为1.48 g/g。 Dietary fiber was extracted from mulberry marc with five different technologies. The single-factor experiment and orthogonal experiment were used to obtain the optimal conditions of extracting dietary fiber. The results showed that the optimal conditions were the concentration of sodium hydroxide solution of 0.25 mol/L, immersing time of sodium hydroxide solution of 1.5 hours, immersing temperature of sodium hydroxide solution of 60 ℃, solid-liquid ratio of 1:25, hydrolysis extract time of 2 hours, hydrolysis extract temperature of 60 ℃. Under the optimal conditions, the maximum yield of soluble dietary fibre was 31.62%. Its water swelling capacity and holding capacity was 4.49 mL/g and 5.53 g/g, respectively. The oil holding capacity was 1.48 g/g.
