耐干燥低温可食性蛋白膜的研制

摘要 可食性蛋白膜广泛应用于糖果、糕点、蜜饯等食品工业中,但在北方冬季干燥低温使用环境下,可食性蛋白膜易出现干裂、易断等现象。为此,试验采用正交试验,筛选出耐干燥低温可食性蛋白膜的最佳配方为胶原蛋白45%、阿拉伯胶3%、复合A-多糖18%、SP-TW-80 0.3%、甘油0.6%。产品在湿度≤50%、温度≤-15℃环境下经过12个月储藏后其抗拉强度达5.08 MPa,断裂伸长率为2.8%,韧性和折叠性良好。 Edible protein film is widely used in food including the sweet, desserts and candy, etc. With low temperature and dry in the winter of the northern China, it is becoming crack and fragile. An experiment on finding out the formula of edible protein film with low temperature and dry resistance was made using orthogonal design of L9(3)^4. Results showed that the optimal formula was 45% collagen protein,3% gum arabic, 18% A-polysaccharides compound,0.3% SP-TW-80 ,0.6% glycerin. The tensile strength (TS) was 5.08 Mpa. Elongation at break (Et) was 2.8% with the RH ≤50%,T≤-15 ℃ for 12 months storage of the edible protein film. Tenacity and fold ability was good.
