摘要
试验分析了日本关东2号籽粒苋籽实蛋白质和氨基酸的营养价值以及常规营养成分,为其加工利用提供理论依据。检测结果显示关东2号籽粒苋籽实蛋白质含量为15.0%。同时分析评价了其必需氨基酸和氨基酸的价值,8种必需氨基酸占蛋白质的总量是421.3 mg/g。并对关东2号籽粒苋籽实蛋白质的氨基酸进行评分和分析,最后得出必需氨基酸指数(EAAI)是0.969 4,这一结果充分说明了日本关东2号籽粒苋籽实是优质的蛋白质资源。
The nutritional value of Japan's Guandong No.2 grain amaranth seeds' protein and amino acids and conventional nutrients were analyzed in the test, which provides theoretical basis for its processing and utilization. Test results showed the Guandong No.2 grain amaranth seeds' protein content was 15%. At the same time , its essential amino acid and amino acid value,were analyzed and evaluated, and 8 kinds of essential amino acids accounted for 421.3 mg/g in the total amount of protein. And the amino acid in Guandong No.2 grain amaranth seed protein were scored and analyzed, finally it was concluded that the essential amino acid index(EAAI) was 0.969 4, the results had shown that the Guandong No.2 grain amaranth seeds was high quality protein resources.
