1株具有拮抗空肠弯曲杆菌作用的唾液乳杆菌的研究 被引量:7

Studies on Lactobacillus salivarius with Antagonistic Activities Against Campylobacter jejuni

摘要 对分离自泡菜、发酵奶酒以及新鲜婴儿粪便的11株乳酸菌(已证明其发酵上清液对空肠弯曲杆菌生长具有明显抑制作用)进行研究。经对其人工胃、肠液的耐受能力测定,表明这11株乳酸菌通过胃肠道后均能存活。经对全部乳酸菌抑制共培养空肠弯曲杆菌生长能力的测定及其抑菌物质的鉴定,得到对共培养空肠弯曲杆菌生长具有强烈抑制作用的1株唾液乳杆菌ZX5,该菌发酵上清液的抑菌物质很可能为有机酸、过氧化氢及细菌素类物质。测定该株唾液乳杆菌抑制空肠弯曲杆菌黏附及侵袭HT-29细胞的能力,结果表明ZX5可将空肠弯曲杆菌对HT-29细胞的黏附及侵袭率降低38%~55%。其中,以排阻作用最为明显。 A preliminary study was performed on 11 strains of lactic acid bacteria isolated from pickled cabbage, fermented milk and fresh infant feces whose fermentation supernatant were proved with capacity of inhibition on the growth of Campylobacter jejuni. All the 11 strains showed high survival rate with the determination of artificial gastric juice tolerance, which indicated the effective survival after passage through the gastrointestinal tract; ZXS, a Lactobacil- lus salivarius strain was identified to be an efficient antagonistic strain for its high inhibitory capacity on growth of co- cultured C. jejuni, whose antibacterial substances in the fermentation supernatant is possible for the organic acid and bacteriocin like substances; Further study showed that L. salivarius ZX5 could decreased the adhesion and invasion rate of HT-29 cells by C. jejuni to 45%-62%, especially in exclusion effect.
