摘要
目的:大麦是我国传统粮食作物之一,研究通过建立的食品BDI-GS新体系对市售普通大麦米进行营养健康效应的综合评价;通过损益指数(BDI)及其累计积分(GS)揭示大麦米对机体主要脏器组织及血清生化指标的影响。方法:以生长期的健康ICR小鼠为研究对象,设有玉米对照组,掺和4%、8%、16%大麦米组,喂养12 d,称重后取血样并剖取9项脏器组织称重,进行血清生化指标的分析检测。结果:大麦米摄取对机体胸腺、脾脏、胰腺及性腺指标的营养、健康存在有益的效应,表现在3个剂量的质量及系数BDI均高于1.0,尤其对胰腺的营养和健康明显有益。且3个剂量大麦米实验组的累计GS也均高于9.0(9项指标)的基本积分,总体对机体营养和健康有益。结论:表明大麦米对机体重要脏器组织有良好的营养和健康效应。同时,大麦米消费对糖尿病、心脑血管疾病及癌症等慢性流行病有一定预防及辅助食疗功效。
Objective: Barley is one of traditional grain cereals, in this study, through the newly established BDI-GS evaluation system of food, nutritional and healthy effects of barley rice on sale are evaluated comprehensively, reveal the influences of barley rice intake for functions of vital organs and/or tissues by benefit-damage index(BDI) and accumulative general scores(GS), as well as serum biochemical parameters detection. Method: The healthy ICR mice during growth were selected as subject, maize control, 4%, 8% and 16% spiking barley rice diets fed mice were designed in the study, respectively. After 12 days feeding, recorded final body weights and obtained blood samples of tested mice, performed necropsy and excised perfectly 9 organs or tissues, recorded weights, and detected the serum biochemical parameters. Results: The barley rice intake for thymus, spleen, pancreas and spermary indicators of organism is of beneficial effects, expressed in organ's weight and index BDI values all above 1.0 at three doses; especially with obviously beneficial effects for pancreas in nutrition and health. And the accumulative GS values of barley rice tested mice in three doses are also all above 9.0 the basic points(for 9 indicators), in general, it is of benefit for organism nutrition and health. Conclusions: The data manifests that barley rice is of better nutritional and healthy benefits for important organs and tissues of organism. Meanwhile, consumption of barley rice is of certain prevention and adjunctive dietary therapy functions for diabetes mellitus, cardiovascular disease and cancers.
