摘要
利用邻苯二甲醛柱前衍生反相高效液相色谱法分析6个中国南方主要栽培蓝莓品种果实的15种一级氨基酸组分。6个蓝莓品种的游离氨基酸含量差异较大,其中夏普兰含量最高,为(715.5±9.9)mg/100 g鲜果重,最少的是杰兔,含量为(332.5±7.5)mg/100 g鲜果重,6个品种间总游离氨基酸含量的变异系数为34.22%。利用SPSS17.0软件分析6个品种蓝莓果实氨基酸组分含量、总氨基酸含量和粗蛋白质含量之间的Spearman相关系数,结果表明丝氨酸、组氨酸和苏氨酸各自都与氨基酸总量及蛋白质含量达显著水平。研究结果有利于为蓝莓资源高效利用和深加工提供科学依据。
High performance liquid chromatography combined with pre-column derivatization with O-phthalaldehyde and fluorescence detection method was used to analysis 15 kinds of free amino acids in 6 kinds of blueberry cultivaries. The content of free amino acids were showed significantily various in 6 kinds of blueberry cultivaries. The highest content of free amino acids was found in Sharpblue with(715.5±9.9) mg/100 g fresh weight, while the lowest content was found in Premier Rabbiteye with(332.5±7.5) mg/100 g and the variation coefficient among 6 kinds of blueberry cultivaries was 34.22%. The Spearman coefficient among 15 kinds of free amino acids, total content of free amino acids and the content of protein in 6 kinds of blueberry cultivaries was obtained by SPSS17.0 software. The significantily coefficient between Ser or His or Thr and total content of free amino acids or the content of protein was significantly each other. High efficient utilization and deepe process of blueberry fruit would be achieved based on our results.
