摘要
本文针对福建红曲黄酒原料处理、酿造、产品、管理等质量控制关键技术进行分析,探讨了红曲黄酒生产及管理要求的技术关键点,为红曲黄酒产业健康、可持续发展提供参考依据。
Brewing technology of Hong Qu glutinous rice wine in Fujian were studied including raw materials treatment,brewing,products,management and so on.And the key points of production and management for Hong Qu glutinous rice wine were investigated.Objective to provide reference for sustainable development of Hong Qu glutinous rice wine industry.
