气调储藏对芝麻生理品质影响的研究 被引量:6

EFFECTS OF CONTROLLED ATMOSPHERE STORAGE ON PHYSIOLOGICAL QUALITY OF SESAME

摘要 以2013年驻马店产芝麻为材料,研究了不同储藏温度(20℃、25℃、30℃)、储藏方式(充氮、真空、常规密闭)下,不同水分含量(6.8%、8.2%、9.1%)芝麻的发芽率、发芽势、电导率和过氧化氢酶活动度的变化.结果表明:在180 d的储藏过程中,发芽率、发芽势、过氧化氢酶活动度呈下降趋势,电导率呈上升趋势,其上升和下降幅度与储藏条件有关;储藏温度、储藏方式、储藏时间和水分含量对芝麻发芽率、发芽势、过氧化氢酶活动度、电导率均有显著影响,影响程度为储藏时间>水分含量>储藏温度>储藏方式;芝麻的发芽率、发芽势与过氧化氢酶活动度呈显著正相关关系,与电导率呈显著负相关关系.水分含量低(6.8%)的芝麻在较低储藏温度(20℃)下,发芽率、发芽势、过氧化氢酶活动度高,电导率低,品质变化趋势小,能较好地保持芝麻的生理活性. Selecting sesame planted in Zhumadian in 2013 as materials, we studied the germination rate,germination potential,conductivity and catalase activity of sesame with different moisture contents(6.8%,8.2%,9.1%) under different storage temperatures(20 ℃,25 ℃,30 ℃) and different storage manners(controlled nitrogen storage,vacuum storage,and conventional airtight storage). The results showed that the germination rate,germination potential and catalase activity had a decline trend,the conductivity had a rise trend during 180-day storage,and the rise and decline amplitudes were related to the storage condition; the storage time,moisture content,storage temperature and storage manner had significant influences on the germination rate,germination potential,conductivity and catalase activity,and the influence degree decreased in sequence;the germination rate and germination potential had significant positive correlation with the catalase activity and had significant negative correlation with the conductivity; and seseame with low moisture content(6.8%) had high germination rate,germination potential and catalase activity,and low conductivity at 20 ℃,and had small changes,so as to well keep the physiological activity of sesame.
