摘要
真菌毒素容易污染粮食及其他食品基质,不仅造成粮食产量、品质降低,而且存在重大食品安全隐患.具有杀菌效果好、无残留、无二次污染等诸多优点的臭氧氧化杀菌技术在真菌毒素降解中具有巨大的应用价值.介绍了目前真菌毒素的流行情况和降解方法,重点论述了臭氧对真菌毒素的降解研究以及臭氧降解机理和产物的安全性评价,此外还综述了臭氧处理对试样品质的影响,以期为臭氧在真菌毒素降解中的应用提供理论参考.
Grain and other food materials can be contaminated easily by mycotoxins,resulting in decrease of grain yield and quality as well as great food safety risks. Ozone has huge application value in mycotoxin degradation due to its advantages of high sterilizing effect,no residues and secondary pollution and so on. The paper described the prevalence of mycotoxins and its degradation methods,emphasized the study on mycotoxins degradation by ozone as well as the degradation mechanism and the product safety evaluation,and also reviewed the effect of ozone treatment on the quality of test samples to provide theoretical reference for the application of ozone in mycotoxins degradation.
