概述了电学特性在食品工业中的应用,主要介绍了电磁波,静电场和电阻抗三个方面。介绍了静电加工新技术在食品加工中的应用,同时在原有的基础上概括了电物性在食品微生物和食品品质检测中的应用,并对电物性在食品加工应用的前景进行了展望。
This article provides an overview of electrical properties in food industry applications, including the electromagnetic, electrostatic field and resistance three aspects. Innovations introduced electrostatic process- ing applications of new technologies in food processing, while in the original on the basis of the general physical properties of food microbiology and food quality testing in the application. And application of electro-physical properties of food processing looks forward to the future.
