摘要
素食产业化是中国餐饮业和食品工业为适应饮食的国内外发展趋势而提出的发展战略,是素食的传统手工制作向现代工业化生产方式的转变。中国发展素食产业有着深厚的基础和良好的机遇,在产业化过程中要处理好传统与现代、文化与市场等矛盾关系,促进中国素食产业的健康发展。
Vegetarian industrialization, a development strategy put forward by China's catering industry and food industry in an effort to get adjusted to catering development trend both at home and abroad, is a vegetarian transformation from traditional handcrafts to modern industrial production modes. With profound foundation and opportunities for development of vegetarian industry, China should properly handle the contradictory relation between tradition and modern, culture and the market so as to promote healthy development of vegetarian industry.
