摘要
桔霉素(Citrinin)是霉菌[如青霉(Penicillium)、曲霉(Aspergillus)、红曲霉(Monascus)等]代谢产生的一种真菌毒素,广泛存在于利用霉菌作用的传统食品及受霉菌污染的食品、谷物和饲料中,对人和动物都有较大的肾毒性作用,对桔霉素检测方法研究进行了综述。
Citrinin is a kind of toxic metabolite produced by fungi of the genera Penicillium,Aspergillus and Monascus,which commonly exists in contaminated foods,grains and feedstuffs by fungus,Citrinin also commonly exists in traditional foods by fungal fermentation.Citrinin has the nephrotoxic effects on animals and humans.This paper reviews the methods for the determination of Citrinin.
