摘要
目的了解河北大学在校生食品安全知识、态度和行为现状,为在大学生中进行食品安全健康教育提供科学依据。方法于2014年10月采用问卷调查法和小组访谈法对837名河北大学在校大学生的食品安全知识状况进行调查,计数资料采用χ2检验,P<0.05为差异有统计学意义。结果在9道食品安全知识题中,女生在"食品包装上‘QS’标志的含义","生、熟食品是否要分开存放或加工"、"高温油炸或熏烤食品是否是癌症的危险因素"、"聚氯乙烯塑料袋在盛放高温食物时是否对人体有害"、"经常饮用纯净水是否有利于身体健康"、"餐具内壁的彩绘图案是否对人体有害"、"铁锅与铝锅比较哪个对人体健康有利"的知晓率均显著高于男生(χ2=2.722、5.501、6.937、9.082、4.198、5.437、4.792,均P<0.05);医学生在"生、熟食品是否要分开存放或加工"、"发霉的玉米或花生能否食用"、"聚氯乙烯塑料袋在盛放高温食物时是否对人体有害"、"铁锅与铝锅比较哪个对人体健康有利"的知晓率均高于非医学生(χ2=10.234、8.617、5.166、8.395,均P<0.05)。结论高校应加强对大学生的食品安全教育,提高他们的食品安全知识水平,改变不良的行为习惯。
Objective To study the knowledge,attitude and practice about food safety of college students in Hebei University,in order to provide scientific foundation for health education.Methods In October 2014,837 college students were conducted with questionnaire survey and group interview on the status of food safety,the data was compared with χ^2 test and the variances were considered statistically significant by P〈0.05.Results Among the 9 food safety questions,the awareness rates of female students were higher than male students in "the implication of 'QS' on food package", "whether raw and ripe food should be divided when storing or processing", "whether the deep- fried or smoked food is the risk factor of cancer", "whether PVC plastic bags are harmful to humans when holding hot food", "whether drinking pure water often is good to health", "whether the inner picture of tablewares is harmful to humans", "which of iron or aluminium pan is good to health"( χ^2=2.722、5.501、6.937、9.082、4.198、5.437、4.792,all P〈0.05).The awareness rates of medical students were higher than non- medical students in "whether raw and ripe food should be divided when storing or processing", "whether moldy corns or peanuts could be eaten", "whether PVC plastic bags are harmful to humans when holding hot food", "which of iron or aluminium pan is good to health"(χ^2=10.234、8.617、5.166、8.395,all P〈0.05).Conclusion It is necessary to carry out food safety education among the college students in order to raise the level of their food safety knowledge and change their bad habits.
