小龙虾对重金属的富集作用及其健康风险研究进展

Research progress on the enrichment of heavy metals in crayfish and its health risks

随着工业"三废"排放及含重金属农药、化肥及饲料的施用等,我国水体重金属污染严重。小龙虾对重金属具有很强的富集能力,其食用引发的安全卫生问题日益引起关注。现对国内外关于小龙虾对重金属的富集机制及其健康风险进行综述,为进一步研究提供依据。

Water pollution by heavy metals was more seriously in our country with the emission of three industrial wastes and the application of pesticides,chemical fertilizer and feed containing of heavy metals. People pay more and more attention to the issue of eating crayfish safety as its strong ability to enrich heavy metals. This paper reviewed the enrichment mechanism of heavy metals in crayfish and its health risks in order to provide evidence for further study.
