摘要
以"圣诞主题宴席设计"为例,介绍了主题教学模式在西餐教学中的应用。并在教师主导、学生主体的"双主"教学过程中,增加菜单设计、营养分析、成本核算和成品营销等教学环节,提高要求,强化训练,从而全面培养学生过硬的职业技能,提高他们的创新意识。
This article introduces the application of thematic teaching pattern in western food teaching taking the course Thematic Christmas Banquet Design as an example.Teaching steps are added such as menu design, nutrition analysis,cost accounting and end-product marketing in“Dual Master” teaching which features teach-er-guided and student-oriented teaching process.The approach improves requirements for students and strength-ens their training so as to cultivate students’solid professional skills and lift their innovative consciousness.
