摘要
以不同品种的青海青稞酒为研究对象,研究了建立青稞酒紫外可见光谱曲线的基本技术参数;利用相似度和聚类分析的方法分析了青稞酒紫外-可见光谱曲线的重复性以及不同青稞酒样品紫外-可见光谱曲线的差异.结果表明,青海青稞酒中挥发性成分收集条件:采用旋转蒸发,蒸发温度30℃、真空度0.092 5 MPa、旋转蒸发时间15 min;紫外-可见光扫描原酒及挥发性组分的参比液为44%vol的乙醇溶液、扫描波长范围为200~330 nm;青稞酒挥发性组分及原酒的紫外-可见光谱曲线都有较高的重复性;青海青稞酒挥发性组分及原酒的紫外-可见光谱学特性受产酒地区、生产厂家及酒品种的影响而存在差异;在互助青稞酒(酒精度43%vol)中分别加入10%、20%、30%、40%、50%的陕霸酒后,其紫外光谱曲线变化非常明显.
The characteristics of UV-Vis absorption spectrum about different highland barley liquor were studied and the technology of UW-Vis absorption spectrum was established. Similarity and cluster analysis were used to study the repeatability about UV-Vis absorption spectrum of same highland barley liquor, and the differences between two different liquors were studied. Evaporation was used to collect the volatile compounds of Qinghai highland barley liquor, and the collection conditions were temperature 30℃, vacuum 0.092 5 MPa, rotary evaporation time 15 min. The scanned wavelength was 200-330 nm, and reference solution was 44%vol alcohol. The repeatability of UV-Vis absorption spectrum about the volatile compounds of highland barley liquor and original liquor was good. The volatile compound of Qinghai highland barley liquor and UV-Vis absorption spectnLm of original liquor were affected by production areas, manufacturers and varieties. There were great changes of UV-Vis absorption spectrum when 10%, 20%, 30%, 40% and 50% of Shaanxi Ba liquor was added into Huzhu barley liquor (alcohol content 43%vol).
