摘要
为了进一步推进烹饪专业校企合作模式的研究,我们选取了大连市部分餐饮行业的管理人员和一线操作人员,主要从大连市的餐饮企业对烹饪人才的需求情况、餐饮行业的特点及发展趋势、餐饮企业对目前烹饪专业教学的建议和意见等方面进行了本次调研,并从大连市的烹饪专业人才市场需求、餐饮企业对烹饪专业学生岗位适应能力需求、餐饮行业和厨师职业发展趋势、餐饮企业的反馈信息对烹饪专业课程改革建议等四方面进行了汇总分析。
To further promote the research on school-enterprise cooperation model for cooking major, we selected some management personnel and forefront operation personnel in the catering industry of Dalian City, and carried out the survey mainly from the talent demand of catering enterprises for cooking talents in Dalian City, the characteristics and development trends of the catering industry, the recommendations and opinions of catering enterprises on the current cooking professional teaching, and made a collection and analysis from four aspects, including the market demand for cooking talents in Dalian City, the demand of catering enterprises for the job adaption ability of students majoring in cooking, the development trends of the catering industry and cooks, and the feedback information of catering enterprises for the reform of cooking professional teaching.
