明胶复合膜的制备及其在食品保藏中应用的研究 被引量:3

摘要 随着人们环保意识的增强和食品安全意识的提高,传统的塑料包装已经不能满足食品包装的需求,因此无毒无公害又可降解的新型包装材料的发现和制备就变得十分必要。以明胶和壳聚糖为原料,通过试验确定了最佳配方组合,并对制备的复合膜进行了草莓和鲜肉的保鲜试验,得出的结论为:当明胶添加量为70%,壳聚糖添加量为35%,甘油添加量为2%时,得出的明胶复合膜性能最好,经应用试验证明其在草莓和鲜肉的保鲜中起到了较好的作用。 As the growth of awareness of environmental protection and the focus on food safety,the traditional plastic package materials can no longer meet the requirement of food packing,thus novel kinds of packing materials need to be discovered and utilized.Formula of complex film made by gelatin and chitosan and its effect in food presentation were studied by experiments investigation to obtain the optimal formula as following:gelatin 70%,chitosan 35% and glycerinum 2%.The combined film was utilized in strawberry as well as meat preservation,which indicated to be practical.
