对牛乳中酪蛋白与钙磷、乳清蛋白与钙的结合特性进行了综述,详细介绍了酪蛋白的结构、p H、压力、温度、凝乳酶、氯化钙等因素对酪蛋白与钙磷结合特性的影响。旨在为牛乳蛋白与钙磷结合的研究提供理论依据。
The binding properties of casein with calcium and phosphorus,whey protein and calcium in milk were reviewed,and introduce the structure of casein,pH,pressure,temperature,rennet,calcium chloride and other factors on casein and calcium phosphorus binding properties.Aim to provide a theoretical basis for the study on milk protein combined to calcium and phosphorus.
