摘要
德宏傣族景颇族自治州地处滇西,由于特殊的自然环境和多民族聚居,形成其独特的人文环境和民俗民风。文章对德宏世居少数民族的传统文化和食用辛香料进行调查和整理,提出了民族特色餐饮中风味饮食形成的特殊辛香料及其应用。
Dehong Dai and Jingpo Autonomous Prefecture is located in western Yunnan.Due to special natural environment and multi-ethic settlement,the unique cultural environment and folk customs have been formed in this area.This paper investigated on and collated the traditional cultures and edible spices in native minorities of Dehong.In addition,the special spices those form the special flavor and their application in food with ethic characteristics were proposed.
