摘要 近年来可食膜的迅速发展为食品保鲜领域提供了新方法,而可食性多糖保鲜膜由于其生物可降解、可食、透湿性好等优点,更成为国内外科研人员的研究热点。本文综述了常见的多糖膜的分类及性能,重点对植物胶类多糖可食膜在果蔬中的应用进行了详细的介绍,并对多糖膜存在的问题和今后的发展方向进行了展望。 Edible coating technology developed quickly in recent years which provided new methods in food preservation field. With the advantages of biodegradability, edibility and better moisture-penetrability, polysaccharide edible film has become a hot research at home and abroad. In this paper, the classification and properties of polysaccharide edible films were summarized, and the application of vegetable gelatin polysaccharide edible on fruits and vegetables were introduced in detail. Finally, the shortcomings of polysaccharide film were analyzed and the future development directions were prospected.
