冰糖规模化生产工艺探析

冰糖可以以精炼糖厂精炼车间的中间制品---精制糖浆为生产原料,也可以以白砂糖为原料,经过再溶、清净、重结晶生产工艺而制成。其有白色、微黄、微红、深红等色,结晶如冰状,故名为冰糖。因冰糖的成分是含结晶水的葡萄糖,与白糖在体内分解的成分一样,所以它可以代替白糖;又因为它的纯度较高,并拥有自身特有的食疗功效,所以其更优于白糖,在市场上颇具竞争力。目前中国规模化生产冰糖的企业并不多,文章从冰糖规模化生产方面论述冰糖的生产工艺。

The semi-product of sugar refinery-refined syrup can be the raw material for rock sugar,and white granulated sugar can also be the material by the a series of processes. This product is called as rock sugar because it has white,yellowish,reddish,deep red colors etc.,its crystal is like icy rock.Because rock sugar＇s component is glucose with crystal water,which is the same as sugar in body,so that it can replace white sugar;also because it has high purity and special food therapy effect,so that it is better than white sugar with strong marketing competition. Nowadays,there are little rock sugar refineries with large scale in China,this paper has introduced rock sugar＇s manufacturing technology in aspect of large scale production.
