摘要
黄曲霉及其毒素污染常发生于乳制品中,导致一定的经济损失,且严重危害人体健康。乳酸菌及其代谢产物均可有效地吸附去除黄曲霉毒素。就黄曲霉毒素、乳酸菌生物防治作用、乳酸菌对乳制品中黄曲霉毒素生物防治作用的应用及安全性评价进行综述,为提高我国发酵乳制品的卫生安全质量提供理论依据。
The contamination ofAspergillus flavus and aflatoxin often occurs in dairy products, resulting in certain economic loss, and causing serious damage to human health. Lactic acid bacteria and their metabolites are capacity of adsorption and removal of aflatoxin effectively. In the present review, it was summarized that the biological control of aflatoxin by lactic acid bacteria, the apphcation of biological control of aflatoxin by lactic acid bacterialactic in dairy products, and the safety evaluation, providing theoretical basis for improving hygienic quality and safety of the fermentation dairy products in China.
