摘要
测定了建阳市5个产区的野生正红菇子实体中主要营养成分含量。结果表明,其灰分、粗蛋白、粗纤维、粗脂肪、总碳水化合物含量均值分别为6.86%、26.0%、6.7%、2.58%和64.12%;矿物质元素P、K、Fe、Se、Mg、Zn和Mn分别为534、1 900、45.9、0.02、42.8、6.1、1.27 mg/kg。其中2个产区正红菇的部分营养成分含量与总体均值有显著差异。
The contents of main nutritional components in wild Russula vinosa Lindbl. fruitbodies from five regions in Jianyang City have been determined, which show that the average contents of ash, crude protein, crude fiber,crude fat and total carbohydrates in the fruitbodies are 6.86 %, 26.0 %, 6.7 %, 2.58 % and 64.12 % respectively, the contents of mineral elements P, K, Fe, Se, Mg, Zn and Mn are 534,1 900,45.9,0.02,42.8, 6.1,1.27 mg/kg respectively. However, the contents of part nutritional components in Russula vinosa Lindbl. from two regions have significant difference with overall average .
