东海裸五角瓜参胶原蛋白提取及其性质研究

摘要 本研究以舟山产裸五角瓜参为对象,研究了体壁组织的基本组成成分、酸溶与胃酶促溶胶原提取率、提取胶原蛋白特性以及其体外抗氧化性。结果表明:裸五角瓜参蛋白质含量较高,粗蛋白含量达到18.56%,且以胶原蛋白为主,该胶原蛋白经酸提法和酶提法处理后具有典型的水产品胶原蛋白特性,2%为Na Cl最佳添加浓度;电泳实验表明该胶原蛋白的链和β链分子量分别为98 k U和102 k U;此外,两种胶原蛋白还具有一定的抗氧化性,但其抗氧化能力较弱。 This paper investigated the components of squid skin, the type and characteristics of the collagen from sea cucumber (Pentaeta inornata). The results were as follows: content of crude protein was 16.43 %, which was mainly collagen. The protein extracted from sea cucumber was typically the aquatic collagen after been tested by UV scanning. Concentration of 2 % could get the highest dissolution rate. The electrophoresis classified collagen into two parties, and β, respectively, and which possessed molecular weight 98 kU and 102 kU. Furthmore, these two kinds of collagen had a certain antioxidative ability, but which was comparatively low compared to Vc.
