摘要
分析广西少数民族特色食品油茶的营养成分。2013年采集广西比较有特色的桂林恭城瑶族自治县当地居民制作的油茶成品,按照国家标准对样品进行能量、蛋白质、脂肪、碳水化合物、维生素、矿物质分析。油茶的茶多酚含量为1 200 mg/kg,锰含量0.371 mg/100 g,NRV%(营养素参考值的百分数)为12.36,铁为0.551 mg/100 g,NRV%为3.67。钠离子含量偏高,达到327.0 mg/100g,占NRV16.3%。广西恭城油茶富含茶多酚,有一定量的铁、锰等金属离子,值得饮用。但要改进传统的工艺,如加盐过量的习惯,避免因摄入过量的盐而引起当地居民高血压患病率的增高。
To analyze the nutrients content of the oil tea. The oil tea products were collected from Gongcheng Yao Autonomous County in Guilin of Guangxi in 2013.We Were detected energy, protein, fat, carbohydrates, vitamins and minerals respectively in accordance to national standard methods. The content of tea polyphenols is 1 200 mg/kg, as well as, manganese content was 0.371 mg/100 g and NRV % (The percentage of Nutrient Reference Value) was 12.36, iron was 0.551 mg/100 g and NRV % was 3.67 ,but the sodium content was high, reaching 327.0 mg/100 g, accounting NRV16.3 %. The Gong cheng oil tea was rich in tea polyphenols, and contain a certain amount of iron and manganese, it is worth drinking. But the traditional crafts should to improve, such as adding excess salt, avoid excessive intake of salt caused the prevalence of hypertension was increased.
