摘要
目的:确定微波辅助萃取蓝莓果渣中花青素的最佳试验条件。方法:以家用微波炉为微波萃取装置,采用正交试验确定微波萃取蓝莓果渣中花青素的最佳试验条件。结果:微波萃取蓝莓果渣中花青素的最佳试验条件为酸性乙醇作为提取剂、萃取时间70s、微波功率560W、料液比1:20。在此条件下蓝莓果渣花青素萃取量为2.98mg/g。结论:此工艺可有效提取蓝莓果渣中的花青素,达到了合理利用蓝莓资源获得高附加值产品的目的。
Objective: To determine the optimum extraction conditions of microwave - assisted extraction of blueberry anthocyanins pomace. Methods: Orthogonal experiment method was used to select the best conditions for extraction of blueberry Anthocyanins by microwave - assisted. Results: The best conditions of microwave - assisted extraction were extraction time 70s, microwave power 560w, ratio of material liquid 1 : 20. Conclusion: With the best conditions of extraction, blueberry pomace quantity is 2.98mg/g. The extraction is effective on the process of anthocyanins from blueberry pomace. The aim of rational utilization of blueberry resources for the purpose of high value- added products is achieved.
