摘要
在全面分析我国食品供应链结构和运作特点的基础上,系统识别我国食品供应链运作中的五种主要风险,基于系统风险防范的角度,从食品源头控制、供应链重构、信息化和冷链物流四个方面阐述防范食品供应链风险的管理措施,并给出实例说明这些措施对完善我国食品供应链运作、保证食品供应链的质量安全具有一定的实践指导意义。
In this paper, on the basis of a comprehensive analysis of the structure and operational characteristics of the food supply chains in China, we identified systematically the five major risks in the operation of the food supply chains in China, then from the perspective of system risk prevention, introduced the measures for the control of the risks, and at the end, presented an empirical case to illustrate the points covered in this paper.
